This gluten free Portoguese rice flour pound cake is called bolo de arroz and it’s light, soft and utterly delicious!
This traditional Portuguese cake is ment to be baked with only rice flour, which means that we can make this cake gluten-free with no hassle. It has a very light, soft and crumbly textures which makes it perfect to go along with a nice cup of tea. I am sure that this gluten free Portoguese rice flour pound cake will be devoured in no time and no one will tell it gluten free!
You will need:
- 150g of rice flour
- 6 eggs
- 150g of sugar
- 50g of sunflower oil
- The zest of a lemon
- A tsp of vanilla extract
- A tesp of baking powder
Beat the egg whites until stiff peaks form and set aside.
Mix the egg yolks with the sugar, then pour in the oil and finally add the flour and baking powder.
Transfer about 1/3 of the egg whites into the mixture of egg yolks and mix with a whisk to soften the dough, then fold in the remaining egg whites : using a spatula.
Transfer the mixture into a greased and floured pound cake mold and bake in a pre-heated at 180 ° for about 30/35 minutes.
