Gluten free tablespoons bundt cake

A very soft cake with a delicate lemon scent, that you will bake in no time without the need for a kitchen scale or measuring cups: to measure the ingredients you will only need a tablespoon!

Thank you Rosemary for the classic twelve tablespoon cake … that I slightly edited! The result was a gluten free tablespoons bundt cake which was super-soft and incredibly tasty!

You will need:

  • 2 eggs
  • 10 tbsp of sugar
  • 10 tbsp of vegetable oil
  • 12 tbsp of gluten free all purpose flour
  • 10 tbsp of milk
  • 2 tbsp of lemon juice
  • The zest of one lemon
  • A tsp of baking powder

Whisk the eggs with the sugar and the lemon peel until the mixture is frothy. Pour the oil and the lemon juice, then add the sifted flour together with the baking powder, alternating with the milk. Transfer the mixture into a 20cm bundt cake pan and bake in a preheated oven at 180°C for 20/25 minutes.

Give it plenty of time to cool, then get your bundt cake out of the pan and decorate it with fresh fruit, a few lemon wedges and a handful of white chocolate flakes.
