Coconut ricotta fudge balls, no bake!

No bake coconut ricotta fudge balls are a simple and refreshing gluten free dessert. These little bliss balls will melt in your mouth!

They say that when it’s really hot outside you shoul be less hungry during the day. I don’t know if that applied to you, but… I definitely can tell that I am as hungry as always even during summer!

Moreover, even in the most hot summer days, I still have that sweet tooth and still want a delicious, refreshing sweet treat later in the evening. What about you?

No bake coconut ricotta fudge balls are just perfect: I don’t need to turn on the oven and still get to enjoy a delicious, gluten free, sweet treat.

You will need:

No bake coconut ricotta fudge balls
  • 200g of ricotta cheese
  • 100g of sugar
  • 125g of shredded coconut plus as needed for rolling the fudge balls

Mix the ricotta with the sugar and shredded coconut. Take small heaps of dough with your hands and work them between the palms to get some little fudge balls. Roll them in the shredded coconut (also, cocoa powder will do) and let them rest in the fridge for at least a couple of hours to serve them.
