Gluten free almond snowball cookies

These gluten free almond snowball cookies are soft, almond-y and incredibly delicious. Smell like comfort and joy!

Gluten free almond snowball cookies

My dear friend Rose gave me these gluten free almond snowball cookies as a lovely gift. Sweet, soft and deep, just like she is. I’m sure these gluten free almond cookies will delight you with their enveloping texture and their delicate aroma.

These pastries will melt in your mouth, leaving behind a delicious and irresistible flavor and will to savor yet another one. Lemon and almond scents, beautiful, delicate and lovely in texture. A true work of art. After all, the inspiration comes from a true artist.

You will need:

Gluten free almond snowball cookies
  • 100g of gluten free all purpose flour
  • 30g of almond meal
  • 40gof sugar
  • 1 whole egg and 1 egg yolk (Don’t throw the egg white away! Bake those instead.)
  • 60ml of vegetable oil
  • A tsp of vanilla extract
  • The zest of half a lemon

Mix all the ingredients together until you get a soft and smooth dough. Wrap it in cling film and let it rest in the fridge for at least three hours.

Take some small balls of dough, roll them in powdered sugar and place them on a baking tray lined with parchment paper.

Bake in a preheated oven for 20/25 minutes at 180 °C.
