Gluten free cake with jam

It takes half an hour to bake, but it’s really delicious. This soft gluten free cake with jam make everyone happy: it is soft, fragrant and super fragrant and you can also prepare it in a gluten free version! Come and find out how.

I like to start the day with a simple, genuine and delicious dessert. Maybe, even homemade. And among the many, this soft gluten free cake with jam is perhaps my favorite.

How can I explain the texture of this wonderful cake to you? We can say that it is halfway between a soft cake and a crumbly tart. The soft and fragrant texture melts in your mouth! It stays soft and moist for days, without crumbling and without drying out. Plus, it’s super easy to bake!

You will need:

  • 2 eggs
  • 150g of butter
  • 200g of gluten free all purpose flour
  • 100g of sugar
  • A tsp of vanilla extract
  • A tsp of baking powder
  • Your favourite jam

First fo all, mix the flour, sugar, vanilla extract and baking powder together. At this point you can go and add the cubed cold butter and knead quickly with your hands or with the help of a stand mixer until you get a mixture which resambles large crumbs.

Add the eggs and continue to knead. You will get a texture similar to that of a very soft and slightly sticky pastry. Don’t worry – that’s exactly what we want!

  • Before adding the eggs, make sure the sugar has been absorbed into the dough. When the dough is no longer grainy between your fingers, you can proceed with the eggs. Add them one at a time and knead until completely absorbed.

And now… let’s have fun with our gluten free cake with jam!

Transfer the dough to a greased and floured 22cm pan. Help yourself with a spatula to spread the dough evenly. You can also use your hands, but make sure they are slightly wet, otherwise the dough will stick to your fingers.

With the back of a spoon, make some holes in the dough, not too deep to pierce the dough completely, and fill them with plenty of jam.

At this point you can bake your soft tart in a preheated oven at 180 degrees for about 30 or 40 minutes, or in any case until completely golden. When it is cold, sprinkle it with icing sugar and serve.
