This gluten free rice flour bundt cake is a soft, moist and delicious bundt cake, free from gluten and butter, that can be served with ice cream and fruit!
There are things you should always have in your pantry. A jar of plain full fat yogurt. One lovely little lemon. A bag of gluten-free rice flour .
This gluten free rice flour bundt cake is a simple dessert, ideal for those who are beginners in the gluten-free baking or even for the more skilled bakers who just want to enjoy the taste of simplicity. The first dessert my mother ever baked for me (and for the whole family!) after being diagnosed with celiac disease. Maybe that’s why I’m so fond of this delicious cake!
You will need:
- 3 eggs, separated
- 200g of sugar
- 300g of rice flour
- A jar of full fat plain yogurt
- 100ml of vegetable oil
- The zest of one lemon
- 16g of baking powder
- A pinch of baking soda
Let’s make the dough for this gluten free rice flour bundt cake!
Beat the egg whites until stiff and set them aside.
Mix the egg yolks with the sugar and the lemon zest until the mixture is frothy. Pour the yogurt and oil while still whisking. Add the sifted powders.
Fold in the whipped egg whites with movements from the bottom up with the help of a spatula.
Pour the mixture into a bundt cake pan and bake in a preheated oven at 180° for about 30 minutes.
