Gluten free waffles (easy peasy!)

Gluten free waffles

A soft, delicious wafer wrapped in a crunchy crust. Don’t you like the idea?

I am one of those people who start decorating for Christimas right after Halloween, and then after New Year’s day I’m already thinking about Valentine’s Day. You know what I say? That these gluten free waffles are really a perfect idea for a romantic breakfast to serve to your sweetheart on the most romantic day of the year (but stay tuned, because I will share with you another super … chocolaty alternative very soon!)

I understand, you’re not a romantic type of guy. No problem, because these waffles are also excellent for a snack or breakfast, or even brunch! You will see, the waffle mix is very simple and does not include too much sugar or added fats, so I really believe that in the right portion it is a very fancy but nutritious idea for breakfast too! Since they are not too sweet at all, they are quite ideal for a savoury brunch as well!

You will need:

Gluten free waffles
  • 125g of gluten free all purpose flour
  • Half a tsp of bakig powder
  • 125g of plain yogurt
  • 2 tbsp of milk
  • 30g of sugar
  • 30g of melted butter
  • 1 egg
  • 2 egg whites
  • A few drops of lemon juice

First, separate the yolk from the egg white. Whisk all three egg whites together with a few drops of lemon juice, then pour the sugar when they start to get frothy. Continue to whip until you get a shiny and firm meringue. You will see, whipping the egg whites well will give you very soft waffles!

Separately, briefly mix the yolk with the butter, yogurt and milk. At this point also pour the sifted flour together with the baking powder. Incorporate the egg whites very gently: help yourself with a rubber spatula and make movements from the bottom up.

When the batter is smooth and lump-free, you can start heating your waffle iron up. Thoroughly brush the entire surface of the waffle iron with melted butter and then pour a couple of generous spoonfuls of the batter. Close theiron and wait.

A little trick you can use to roughly tell if your gluten free waffles are cooked through is this: when smoke starts to come out from the sides, it means that the waffles are almost ready. Open the waffle iron and very gently lift the waffles to check that they are well browned even underneath or if you still need a few minutes of cooking.

Serve your pancakes with fresh or dried fruit, melted chocolate or, perhaps, with a delicious scoop of ice cream.
