Rice flour gluten free pound cake

This gluten free Portoguese rice flour pound cake is called bolo de arroz and it’s light, soft and utterly delicious! It happens to be dairy free as well!

Gluten free rice flour cake

This traditional Portuguese cake is ment to be baked with only rice flour, which means that we can make this cake gluten-free with no hassle. It has a very light, soft and crumbly textures which makes it perfect to go along with a nice cup of tea. I am sure that this gluten free Portoguese rice flour pound cake will be devoured in no time and no one will tell it gluten free!

  You will need:  

Gluten free rice flour cake
  • 150g of rice flour
  • 6 eggs
  • 150g of sugar
  • 50g of sunflower oil
  • The zest of a lemon
  • A tsp of vanilla extract
  • A tesp of baking powder

Beat the egg whites until stiff peaks form and set aside.

Mix the egg yolks with the sugar, then pour in the oil and finally add the flour and baking powder.

Transfer about 1/3 of the egg whites into the mixture of egg yolks and mix with a whisk to soften the batter, then fold in the remaining egg whites using a spatula. Be gentle and patient. This is crucial if you want to bake a super soft, airy and delicious cake.

Transfer the mixture into a greased and floured pound cake pan and bake in a pre-heated over at 180°C for about 30/35 minutes.
